Baked Spinach Balls
These easy-to-make spinach balls make a great snack or vegetarian meatball substitute! My family loves eating these as a snack on their own or with a side of marinara or mustard sauce for dipping.

Ingredients for 12 Servings

2 cups Stuffing, sage & onion, dry mix
2 tbsp grated Parmesan cheese
1 small onion, chopped
1 medium garlic clove, minced
1/4 tsp thyme, leaves, ground
1/4 tsp black pepper
10oz Spinach, chopped, frozen, thawed and well drained
1/4 cup fat free reduced sodium chicken broth
2 egg whites, beaten
1 cup dijon mustard (optional, for dipping)

- – In a medium bowl, combine stuffing mix, cheese, onion, garlic, thyme, and pepper, mixing well.
– In a separate medium bowl, combine spinach, broth and egg whites, mixing well. Stir into the stuffing mixture, cover and refrigerate for 1 hour or until the mixture is firm.
– Preheat the oven to 350ºF and shape the mixture into 24 balls.
– Place the balls onto an ungreased baking sheet.
– Bake at 350 degrees for 15 minutes or until they are golden brown*
