This easy breakfast recipe is super simple, it only includes eggs, olive oil, salt, and pepper. If you haven’t fried your eggs in olive oil before, you’ll never go back after trying it this way!

  • 2 ½ tablespoons extra-virgin olive oil (can substitute with a flavored olive oil).
    ¼ cup freshly grated parmesan or provolone cheese.
    4 extra large eggs.

  • 1. Preheat the broiler
    2. Heat the oil in a medium-size ovenproof skillet over medium heat. Carefully break the eggs into the skillet and fry them until the whites are almost set, about 2 minutes. Remove the pan from the heat and sprinkle the eggs with a little salt, freshly ground pepper, and the cheese. Set the pan under the broiler, about 6 inches from the heat, and cook until the cheese is melted, 3-4 minutes.
    3. Serve immediately.
