Ingredients for 6 Servings

  • – 1 tbsp olive oil
    – 1 cooking spray
    – 2 medium garlic cloves , peeled and minced
    – 1 medium red bell peppers , seeded and cut into strips
    – 1 tbsp fresh cilantro , chopped
    – 2 tbsp chopped parsley
    – 1 whole chicken, raw , cut into sixths, skin removed
    – 1 cup water
    – 1 tbsp paprika
    – 1/4 tsp paprika, hot, Hungarian (optional)
    – 1 tsp ground cumin (optional)
    – 1 pinch salt and pepper

Preparation

  • 1) Spray a large non-stick skillet with cooking spray, sauté garlic and red peppers for 2 minutes. Spray with additional cooking spray if necessary.
    2) Add herbs, spices, chicken, and water. Cover and simmer over low heat until most of the liquid has evaporated, about 30 minutes.
