1 lb large sea scallops, patted dry
1 tsp olive oil or avocado oil
1 tsp paprika
1 tsp garlic powder
1/2 tsp cayenne pepper (adjust to taste)
1/2 tsp ground cumin
Salt and freshly ground black pepper, to taste
1 tbsp fresh parsley, chopped (for garnish)
Optional: a squeeze of fresh lemon juice

- Pat the scallops dry with a paper towel to remove excess moisture. This ensures they will sear nicely.
In a small bowl, mix the paprika, garlic powder, cayenne pepper, cumin, salt, and pepper. Sprinkle the spice mixture evenly over both sides of the scallops.
Heat a skillet over medium-high heat and add the olive oil (or avocado oil). Allow the oil to heat until shimmering.
Add the scallops to the hot skillet, spaced out so they’re not overcrowded. Cook for about 2-3 minutes on the first side until a golden brown crust forms. Flip and cook for another 1-
2 minutes, until opaque and just cooked through.
Remove the scallops from the pan and plate them. Garnish with fresh parsley and a squeeze of fresh lemon juice if desired.
